Achèteriez-vous du jambon ou toutes autres charcuteries dont la couleur est grise avec quelques reflets verts ? Non bien sur et les industriels de la charcuterie le savent très bien. C’est la raison pour laquelle notre bon jambon tout rose contient un ingrédient essentiel, le Nitrite de Sodium (Additif e250) qui donne à la viande cette couleur rose si « appétissante » pour le consommateur.
Le problème avec cet aditif, c’est qu’il est au cœur d’un enjeu sanitaire très important. Il est suspecté de jouer un rôle dans le développement du cancer colorectal, le troisième cancer le plus mortel. C’est un phénomène qui se déroule durant la digestion. En avalant un morceau de charcuterie, les molécules de nitrite vont réagir avec les protéines de la viande. Elles vont avoir tendance à se transformer en substances très dangereuses, les nitrosamines qui sont connues pour causer des dommages dans le gros intestin. Cela peut provoquer des ruptures de l’ADN ou faire muter les cellules en cellules pré-cancéreuses.
Si la viande ne contenait pas cet additif le nitrite, cela éviterait plusieurs milliers de cancers en Europe chaque année.
Cependant, les industriels on un argument de masse en faveur du nitrite, c’est son rôle contre le botulisme. Il s’agit d’une bactérie qui s’attaque au système nerveux et qui peut s’avérer être mortelle. Toutefois, des industriels qui fabriquent de la charcuterie sans nitrite ça existe comme au Danemark par exemple et les clients qui consomment la viande sont en pleine forme. Il y a 25 ans qu’un bio chimiste fabrique de la charcuterie sans nitrite et depuis, les autorités de santé publique n’ont recensé aucun cas de botulisme lié à la charcuterie. Le botulisme était un souci dans l’industrie de la viande il y a un siècle, alors que les usines et les abattoirs n’étaient pas aussi propres qu’aujourd’hui, cette bactérie n’affecte plus personne de nos jours.
Si l’on compare le nombre de cas de botulisme chez les consommateurs qui mangent de la viande sans nitrite et le nombre de cancers chez ceux qui consomment de la charcuterie au sel nitrité, il n’y a pas photo.

Botulismul era o preocupare în industria cărnii cu un secol în urmă, în timp ce fabricile și abatoarele nu erau la fel de curate ca și astăzi, bacteriile nu afectează pe nimeni astăzi.
Întrebat, CEO-ul Herta France, (filială a grupului Nestlé) : ar fi posibilă producția de cârnați fără nitriți ?
„Este extrem de periculos, nu îmi voi lua niciodată această responsabilitate dacă nu sunt 100% sigur că nu voi avea un caz de botulism”.
Dacă comparați numărul de cazuri de botulism la consumatorii care consumă carne fără nitriți și numărul de tipuri de cancer la cei care consumă carne sărată cu nitriți, nu există nicio imagine.
„Depinde de consumatori să-i facă pe industriași să se plece, deoarece dacă există carne cu nitrit de sodiu, este pentru că există o cerere puternică și prin acțiunile noastre de zi cu zi vom ajunge să trăim într-o lume mai curată, mai respectuoasă față de viață și mediu inconjurator; deci mai bine pentru noi. »
Mulți producători locali au devenit „ecologici”, fie în Franța, Elveția sau Belgia, iar aceasta este o oportunitate pentru noi consumatorii de a sprijini întreprinderile locale, contribuind în același timp la protecția și respectul pentru mediul nostru.
